Trout with Almonds
  • 1 large trout - filleted
  • salt and pepper
  • 120 grams flaked almonds
  • juice 1 lemon
  1. Sprinkle trout fillets with salt and pepper.
  2. Heat butter in frypan - gently fry almonds turning frequuently until golden.
  3. Remove almonds - drain on kitchen paper- keep warm.
  4. Place a few trout fillets in frypan into hot fat, gently fry on each side for about 5 minutes - until golden brown and cooked through.
  5. Place on warm serving plate and keep hot - continue frying the other trout fillets in the same manner.
  6. When done, add lemon juice and remaining butter to frypan heat gently and pour over fish.
  7. Serve with a sprinkle of almonds on each fillet.
