Whitebait Fritters 2
A New Zealand favorite This recipe is for lovers of bait who want the flavour of the bait to not be influenced by the egg omelet style used by many and in fritter recipe number 1.
Cuisine: New Zealand
  • 100g (4 ozs) of whitebait per person
  • 1 egg white.
  • salt
  • pepper
  1. Beat the egg white until fluffy and then gently fold into the bait and then fry slowly as a fritter.
