Venison Patties

  • couple of kilos of neck or scrappy venison meat
  • 500g beef or mutton fat
  • 2 teaspoon salt
  • 2 teaspoon pepper
  • 1 egg.
  • 2 teaspoons sage
  • teaspoon mixed herbs
  • 2 chopped onions
  1. Mince or finely chop up a couple of kilos of neck or scrappy meat with half a kilo of beef or mutton fat.
  2. Add 2 teaspoons of salt and the same of black pepper.
  3. Add 1 egg.
  4. Add 2 teaspoons of sage and a teaspoon of mixed herbs.
  5. Also two chopped onions.
  6. Mix all together and form into patties and fry or freeze for a later trip.
