How do I know it's 'Fresh' Fish?

Fresh Fish should be out of the water no more than two days and packed in ice.
Smell the fish, the odour should be mild and fresh, the skin shiny and eyes bright, clear and full.
The flesh should be so elastic that it springs back into place after you have pressed it with a finger.
Gills, when opened should be red.
*Note* with age the gills fade to pink, grey and brown.
