Mustard Cauliflower Pickle
This is delicious especially on cold meat and an old NZ favourite.

  • 1 Large cauliflower
  • 4 onions
  • I red capsicum
  • 5 cups vinegar
  • 2 cups sugar
  • 2 tablespoons mustard
  • 2 tablespoons curry powder
  • 1 tablespoon tumeric
  • ½ cup cornflour
  1. Chop all vegetables into small even sized pieces. Place all ingredients except flour into saucepan. Bring slowly to the boil ensuring sugar is dissolved. Boil for ½ hour until vegetables are tender. Mix cornflour to paste with small amount of vinegar, add to vegetable mixture. Return to boil, cook for further 3 minutes. Pour into warm sterilized jars, cover & label.
